Rainbow Cookies

I've always wanted to learn how to make "rainbow" or tricolored cookies and finally had some time to search for a recipe and actually make these small treats! I made three almond cake layers hand colored with pink green and yellow food dye. I then filled the cakes with a raspberry jam and topped with a chocolate ganache and chocolate sprinkles.
